We LOVE baked sweet potatoes... And I think they're actually a very healthy choice! Obviously you can't smother them in butter and brown sugar, or anything like that... But we bake them just like a regular potato and eat. Aidan enjoys it too.
Also, I peel the sweet potatoes, cut into slices, roll in olive oil and sea salt, then bake for about 40 minutes. Super yummy!
We eat a lot of plain old steamed veggies. If I'm making a main dish, I just can't handle actually making a complicated veggie dish. We eat a lot of green beans, broccoli, baby carrots, zucchini, summer squash, and mixed greens or spinach salads.

Sounds yummy Jessica, we mostly eat steamed veggies too - I just but frozen ones and make a mix. On Shabbat I try make something more fancy.

It's a rutabaga I didn't know that until I was searching for a rutabaga recipe today. Since I never saw that it was answered I thought I'd let everyone know.

Fry up in butter (or oil) slices of zucchinni and yellow squash add some onion.
