I #love# Rachael Ray.
I have been meaning to share this one - it turned out really good when I made it. See the Cheesy Orzo recipe for the side dish I made with it.
Marinated Beef/Chicken/Pork or Portobello Mushrooms. (I made the chicken) Makes 4 servings
BASIC MARINADE 3 TBSP red wine vinegar 1/3 cup extra virgin olive oil 2 cloves garlic, chopped (I have a garlic press and just used that) 1/4 to 1/2 tsp crushed red pepper flakes 1 TBSP chopped fresh thyme 1 TBSP chopped fresh parsley
MARINADE ADN GRAVY RECIPES WILL BE ENOUGH FOR *ONE* OF THE FOLLOWING: -4 beef fillet mignon steaks 6oz each, 1 inch thick -4 strip streks (12 oz each) -4 pieces boneless skinless chicken breast (6-8 oz each) -4 center cut pork loin chops (8 oz each, 1 inch thick) -4 portabello mushroom caps
BASIC PAN GRAVY 2 TBSP butter 2 TBSP chopped shallots or onion 4 mushrooms, crimini or button, finely chopped (optional - I used them) 2 TBSP flour 1 cup beef, chicken or vegetable stock
Combine marinade ingredients in the bottom of a shallow dish. Season meat of choice with salt and pepper and set into marinade, turning to coat. Allow meat to hang out 10 minutes, turning occasionaly.
Heat a skillet over medium high heat. Add marinated meat and cook 5-6 minutes on each side. Remove to a warm platter. Add butter to the skillet, then chopped shallots or onion and mushroom bits (optional) and saute 3 minutes over moderate heat. Add flour to the pan and cook 2 minutes, stirring constantly. Whisk in stock and reduce for another minute. Pour over meat and serve.

I just made this and the orzo... only I used some whole grain high protein higgh Omega-3 penne instead of orzo - used a full 2 c. measure (up to the top of the glass, not the 2 c. mark) and turned the heat up and boiled hard at the end to get most of the liquid off. And I used olive oil in the gravy instead of butter. I thought the chicken was so-so - but that's a compliment from me because I don't like meat. ;D DH thought it was quite tasty. The baby thought it was too spicy. But we all loved the pasta. Which RR cook book was this from? I keep thinking of getting one of her books but I don't know which one I wantl.

By the way, I scanned the only RR cook book I have and didn't see either recipe and there's no index to look at. The book I have is Cooking 'Round the Clock.

Sorry it took me so long to answer!! The recipe for the orzo and the chicken/pork/beef/shrooms came from "Rachael Ray 30 Minute Meals 2" She's posing on the cover as if she's getting ready to cut some tomatoes and the spine is green.
